Whether it’s the smoky scent of grilled prawns over charcoal, tangy shrimp marinated in fish sauce, tender boiled shellfish with spicy dipping sauce, or the rich, savory taste of pickled crab with zesty seafood sauce. Dishes like Thai seafood salad (Yum Talay), bursting with spicy and sour Flavors, are always a hit. Personally, seafood is one of my Favorite dishes, and I love seafood salad for its bold, hot, and spicy taste. If you ever visit Thailand, don’t miss out on trying some!</p>

<p>300 g of pork neck or grilled pork, sliced into bite-sized pieces</p>
<p>1/4 cup of broth or water</p>
<p>Chili flakes (to taste)</p>
<p>1/2 tablespoon of toasted rice powder</p>
<p>1/2 tablespoon of lime juice</p>
<p>1/2 tablespoon of fish sauce</p>
<p>1 tablespoon of sliced shallots</p>
<p>pinch of sugar</p>
<p>Chopped green onions and coriander (or culantro if preferred)</p>
<p>Fresh mint leaves for added aroma</p>
<p>Fresh vegetables like cucumber, long beans, or cabbage</p>
<p>Sticky rice to serve on the side</p>
<p><strong>Instructions:</strong></p>
<p>1.Grill or Sear the Pork: Grill the pork on a pan or charcoal grill until slightly charred for a smoky flavor. Then slice into bite-sized pieces. (Alternatively, you can sear the pork in a little broth until cooked through.)</p>
<p>2.Season the Pork: Place the sliced pork in a mixing bowl. Add chili flakes, toasted rice powder, lime juice, sugar and fish sauce. Toss well to combine. Taste and adjust seasoning aim for a perfect balance of sour, salty, and spicy.</p>
<p>3.Add Fresh Herbs: Add sliced shallots, chopped green onions, coriander, and fresh mint leaves. Gently mix everything together.</p>
<p><strong>Serve:</strong></p>

<li>Fry the tofu until golden brown, then remove and drain excess oil.</li>

<p>Wash and cut the mushrooms into bite-sized pieces.</p>
<p>Roughly chop Thai coriander and coriander roots.</p>
<p>Tear kaffir lime leaves, removing the central stem.</p>
<p>Pound red chilies until fine and set aside.</p>

<li><strong> Make the Broth:</strong></li>
</ol>
<p>Bring water to a boil in a pot.</p>
<p>Add galangal, lemongrass, coriander root, shallots, and kaffir lime leaves.</p>
<p>Season with salt, fish sauce, chili paste, and chili oil. Stir well to dissolve.</p>
<p>Let it simmer for a few minutes until aromatic.</p>

<li><strong> Cook the Seafood and Mushrooms:</strong></li>
</ol>
<p>Add the mixed seafood and mushrooms.</p>
<p>Increase the heat to bring the broth to a rolling boil (Do not stir at this stage to avoid a fishy smell).</p>
