Ingredients:
200g bean sprouts
200g leek (long shredded)
2 tube of egg tofu or firm tofu (sliced into thick rounds)
100g minced pork
3-4 cloves garlic (chopped)
2-3 red chili peppers (sliced diagonally)
1-2 stalks spring onions (cut into pieces, optional)
2 tbsp light soy sauce
1 ½ tbsp oyster sauce
½ tsp sugar
Cooking oil (for frying and stir-frying)

Instructions:
Prepare the ingredients
- Remove the black tips from the bean sprouts, wash thoroughly, and drain.
- Cut the leek into
- the egg tofu into thick rounds.
Fry the tofu
- Heat enough oil in a pan over medium heat.
- Fry the tofu until golden brown, then remove and drain excess oil.

Stir-fry the ingredients
- Remove excess oil from the pan, leaving only a small amount.
- Add garlic and stir-fry until fragrant then add the leek or bean sprouts and stir-fry until just cooked. Season with light soy sauce, oyster sauce, and sugar, stirring well to combine.
Final touches & serving
- Add the spring onions and red chili peppers, stir-fry briefly, then turn off the heat.
Serve hot and enjoy!
